About food fortification with vitamins

AbstractCriticism of attempts to enrich foods (mainly dairy products) with vitamins by adding mashed or concentrates of fresh berries and vegetables has been reviewed. Concept "enriched (fortified) product" has been considered. It has been shown that the addition of fruits and vegetables, which are a source of vitamin C, does not increase the content of B vitamins to a level that meets the criteria for fortified foods. The differences in the regulations concerning to the degree of enrichment of foods are discussed. Development of specific educational programs to increase knowledge about vitamins is required not only for the population but also for scientific and medical professionals.
